Lauren graduated from UW-Madison with a Bachelor’s Degree in Biology and a Certificate in Global Health in 2015. Her coursework brought her as far as the country of Ecuador where she discovered her passion to promote food security as an entry point to break the poverty cycle. In between schooling she spent time interning with Sheboygan’s Department of Public Health as well as the SCIO Farmers Market. Now that she has officially moved back to the Sheboygan area, she is grateful to be able to use her knowledge and Sheboygan connections with like-minded people to give back to the city she grew up in through her role as Communications and Development Coordinator at Sheboygan County Food Bank.
Lauren has a deep belief that health care and hunger relief organizations are natural allies that need to work together to create healthy communities. She is currently a proud member of the Sheboygan Activity and Nutrition Coalition under Healthy Sheboygan County 2020. She also enjoys writing newspaper articles for the Healthy Sheboygan County 2020 column.
In her spare time, Lauren loves volunteering at St. Dominic’s free Emmaus meals, hiking, running, and hanging out with family.
